Herring, the king of fish

It is the most emblematic fish of our coastline. It is celebrated during events every year in November on the Opal Coast. At Calais XXL, The Herring Festival takes place in mid-November in the Courgain Maritime district. This event is organized by the association "Calais, History and Traditions", with tastings and traditional music. Herring can be cooked in many ways, including in a saurisserie, the place where the fish is smoked. The saurisserie Emile Fournier et Fils is an institution in Calais, created in 1901! A wide range of smoked products and prepared seafood products are offered there.
