Since 2019, Olivier Bouclet has been delighting Calais's sweet tooth with Envies Sucrées, an artisanal pastry shop nestled on Rue Babinet, overlooking the charming Place Crèvecœur. Valrhona chocolate and Bourbon vanilla from Madagascar are used to create cream puffs, éclairs, tarts, and individual pastries of exquisite taste. The shop's signature creation, the Lady Hamilton, pays homage to Emma Hamilton, mistress of Admiral Nelson, who ended her tumultuous life in Calais in 1815: on a sweet pastry base, almond cream, red berries, hibiscus, and fig-raspberry confit combine to create a cocktail of flavors as elegant as it is unexpected. The shop also offers pastry workshops to share its expertise and free delivery within the greater Calais area.
